     Turkey Taquitos

Ingredients
Olive Oil
Cheddar Cheese
Mascarpone Cheese
1 pck. of Ground Turkey or Veggie Meat
1 Whole Yellow Onion Chopped
1 Tbs. of Ground Cumin
1 Tsp. of Ground Black Pepper
1 tsp. salt
20 - 25 Corn Tortillas (Yellow Corn Preferred)
 
1 can Black Beans
1 cup of chopped spinach packed
For dipping Salsa, and Sour Cream or Greek yogurt

Instructions
- Preheat oven to 400 degrees. Lightly spray cookie sheet with olive oil. - 1 tsp. olive in a frying pan heat and medium heat - Add meat stir until brown. If Veggie until evenly heated. Add a dash of salt and pepper. - Add onion,add spinach, add cumin, add another dash of salt and pepper. Cook together until onion is tender. - Black Beans drained and rinsed
- Gently mash beans into mixture, add one more dash of salt and pepper - Add 1 cup of Mascarone Cheese. Simmer together for 5 minutes. - Set aside - Pour olive oil in a bowl
- Heat frying pan on medium high heat - Grab corn tortilla and brush with olive oil - Fry tortilla until tortilla becomes crispy - Put tortilla on cooking dish, add filling and roll - Repeat until all done with filling. - Top with grated cheddar cheese - Put into oven and bake for 20-30 minutes depends on oven. Taquitos should be crunchy.
- Serve with dipping suggestions.
