     Chicken Rotini

Ingredients
6 lean chicken breasts (boneless, skinless)
1 TBSP EVOO
1 large onion
1 large carrot
2 ribs celery
1/2 cup fresh basil
2 tsp dried oregano leaves
4 cloves garlic
8 roma tomatoes (chopped)
 
1 medium sweet potato (baked)
1/4 cup chicken broth
1 can (10 oz) brown rice rotini pasta

Instructions
Cut chicken into thin strips.
In large skillet heat olive oil over medium heat. Add onion, carrots, and celery and cook until they soften (not brown). Add herbs and garlic and continue cooking for 2-3 min. Add roma tomatoes and sweet potato pulp and chicken broth. Add chicken and increase heat until mix comes to boil. Simmer for 20 min.
Meanwhile in a large saucepan bring 6 quarts of water to a boil. Add salt and olive oil to prevent sticking. Cook pasta. Drain and return to pot.
Add tomato mixture to pasta and mix.
