     Salmon cakes

Ingredients
One can of good salmon, bones taken out
1 carrot, shredded
1 celery stalk, minced
Tablespoon of chopped parsley
Small shallot- sauteed for about 10 minutes
1 Tbsp of mayo
Egg (beaten)
Panko crumbs
Canola oil
 

Instructions
Mix all together in a bowl. Form patties. Dredge in beaten egg then panko breadcrumbs. Heat canola oil in skillet. Cook patties for 5 minutes each side. Delicious! I add a little hot sauce on top.
Optional side salad- 1 Kirby cucumber, thinly sliced. 1 tomato, cut into small wedges Little bit of minced garlic Olive oil and balsamic vinegar Salt and pepper Mix and serve!
