     Scotch Pancakes

Ingredients
2 eggs
Salt
2 tbsp sugar
1 tsp vanilla
1 cup flour
1 cup milk or yogurt
4 tsp baking powder
Fruit
 

Instructions
Beat the eggs until frothy. Add the salt, sugar and vanilla. Alternate flour and milk (or yogurt). Just before cooking, add the baking powder. Stir briefly until the lumps are out. Add fruit if desired. A recent favorite in our house is to add chopped bananas, orange rind and toasted almonds.
Cook on a hot griddle without oil. These pancakes don't stick because the baking powder creates a little gas cushion under the pancakes.
Serve hot with maple syrup and yogurt or fruit toppings.
