     Brazil Nut Mousse

Ingredients
2 cups heavy cream
2 cups white chocolate chips
1 1/3 cup sugar
pinch of salt
2 tsp vanilla
1 cup chopped brazil nuts
16 candied cherries
1/2 cup water
 

Instructions
Heat water and sugar until sugar is dissolved. Add vanilla and chocolate chips and melt until smooth. Remove from heat and place pan in cold water to cool. Then refrigerate to chill completely.
Chill metal bowl and beaters in freezer for 15 minutes. Wisk cream in chilled bowl until peaks are stiff. Remove chocolate from refrigerator and wisk until smooth. Fold into whipped cream.
Place into indevidual serving dishes. Freeze until firm.
Garnish with nuts and cherries. Enjoy!!
