     Cumberland Sauce

Ingredients
100ml redcurrant jelly
50ml port wine
50g shallot, finely chopped
1tsp mustard
30ml lemon juice
60ml orange juice
1 orange zest, julienne, and salt to taste.
 

Instructions
Melt jelly with port. Blanch shallot and add to jelly mixture. Add mustard and juices. Blanch orange zest and add to the sauce. Add salt to taste. CUMBERLAND SAUCE is traditionally served with COLD MEAT
