1-2 c. dried cannellini beans or 1-2 15 oz can canellini beans
1 lb ground sausage
1 medium onion, diced
1 medium carrot, diced
3 T olive oil
2 garlic cloves, minced
2 15 oz can diced tomatoes
8 c chicken broth
1 t dried thyme
1 bay leaf
salt and pepper
1 c. ditalini pasta (or any small pasta)grated parmigiano reggiano cheese
This is also very good with zucchini in it!
Instructions
If using dried beans, place them in a pot, cover with cold water and let soak overnight. Drain
In a large pot, brown sausage. Remove from pot and drain fat. Add onion, carrot and olive oil and saute for 5 min, until soft. Add garlic and saute 1 min more.
Add tomatoes, broth, seasonings, beans and sausage, cover and simmer for an hour. (if using dried beans, check for doneness and simmer longer if needed)
Add pasta and cook until tender.
Serving

serve with grated cheese and a drizzle of olive oil
