Sauté beef until browned. Remove. Sauté onion and
mushrooms with salt and pepper until tender.
Reduce heat to medium.
Whisk 1/4 cup of beef broth with flour. Add all broth, and beef
to pan (and a bit of water if necessary). Scrape up brown bits
and stir. Cover and cook 8 min or until thickened.
Stir in sour cream, scallions, and butter. Sprinkle on parsley
and serve over noodles.
