     Quick Chicken Paprika

Ingredients
1 package Uncle Ben's Ready Rice Original Long Grain Rice
1 Tblsp canola oil
1 large white or yellow onion, chopped
1 red bell pepper, chopped
1 lb skinless chicken breast, chopped into bite-size pieces
1 Tblsp paprika
1/4 cup low-sodium chicken broth
2 ounces fat-free plain Greek yogurt
fresh parsley, chopped (optional)
 

Instructions
Prepare the rice according to package directions.
Meanwhile, place a large skillet over medium-high heat and add the oil. Add the onion to the skillet and saute for 3 minutes, then add the red pepper. After two minutes, add the chicken and paprika.
Cook, stirring often, until the chicken is no longer pink, about 5 minutes. Add broth to the pan and use the back of a wooden spoon to scrape up any bits that might have stuck.
Remove from heat and stir in yogurt. Serve immediately, over rice. Garnish with fresh parsley if desired.
