1. Grease a rectangular slice pan. line base and sides with baking paper, extending paper 2cm above pan edges.
2. Combine flours, sugar and cocoa powder in a large bowl. make a well in the center. Add butter, egg and vanilla. Mix well. Stir in desiccated coconut. Place in prepared pan. Using your fingertips, press mixture evenly over base.
3. Cook in a moderate oven (180C) for about 20 minutes, or until cooked when tested (skewer inserted into the centre should come out clean). Transfer to a wire rack.
4. Meanwhile, make chocolate icing. Combine icing sugar, cocoa powder, butter and water is a medium bowl. stir until butter is melted and mixture is smooth. Pour icing over hot slice. Spread evenly. Sprinkle with shredded coconut. Cool in pan. Using baking paper, lift slice onto shopping board and cut into squares.
