     Avocado Edamame Dip

Ingredients
1 cup shelled green soybeans -- cooked & cooled
1 medium ripe avocado -- peeled & chunks
1/4 cup scallions -- sliced
1/4 cup mayonnaise
2 tablespoons fresh lemon juice
hot sauce or salsa -- to taste
salt and pepper -- to taste
 

Instructions
In a food processor, pulse soybeans until finely chopped. Add remaining ingredients and process until smooth.

NOTES : Per Tablespoon: 34 CAL (75% from fat), 1g PROT, 3g FAT, 1g CARB, 12mg SOD, 1mg CHOL, 0.5g FIBER
