     Cucumber with Walnut Miso

Ingredients
1/2 cup red miso
1/4 cup sugar
1/4 cup mirin
1 Tbsp. rice wine vinegar
2/3 cup walnuts, minced
1 English cucumber
 

Instructions
In a small saucepan, combine the miso, sugar, mirin and rice wine vinegar; cook over low heat stirring constantly for 5 minutes. Remove from the heat and stir in the walnuts. Cool. Cut the cucumber into sticks. Spoon a little of the walnut miso on the end of each piece then serve.
