1 can mild chili beans
|

1 cup water
|
|
1 tsp ground cumin
|
|
1 tbsp olive oil
|

1 medium onion, chopped
|

2 tsp salt
|
|
2 cloves garlic, minced
|
|
1 large green pepper, chopped
|
|
1 tsp dried oregano
|
|
|
|
1/4 tsp ground cinnamon
|
|
1/8 tsp cayenne pepper
|

2/3 cup quinoa
|
|
1 cup frozen corn
|
|
1 to 2 cups tomato sauce
|

Instructions |
|
|
Heat oil in pot over medium heat
|
|
|
Add onion, 1 tsp salt, garlic, green pepper, and
spices and saute for 5-10 minutes.
|

|
Stir in quinoa. Then add corn, tomato sauce, and
water. Simmer 20 minutes.
|
|
|
Add beans and second tsp of salt. Simmer another 10
minutes
|

Suggestions |
|
Serve with cheese, tortilla chips, and sour cream as desired.
