     Quinoa Chili

Ingredients
1 can mild chili beans
1 cup water
1 tsp ground cumin
1 tbsp olive oil
1 medium onion, chopped
2 tsp salt
2 cloves garlic, minced
1 large green pepper, chopped
1 tsp dried oregano
 
1/4 tsp ground cinnamon
1/8 tsp cayenne pepper
2/3 cup quinoa
1 cup frozen corn
1 to 2 cups tomato sauce

Instructions
Heat oil in pot over medium heat
Add onion, 1 tsp salt, garlic, green pepper, and spices and saute for 5-10 minutes.
Stir in quinoa. Then add corn, tomato sauce, and water. Simmer 20 minutes.
Add beans and second tsp of salt. Simmer another 10 minutes
Serving Suggestions
Serve with cheese, tortilla chips, and sour cream as desired.
