     Honey Mustard Pretzel Chicken

Ingredients
4 cups hard pretzels, coarsely crushed
1/2 cup olive oil
1/2 cup dijon mustard
1/3 cup honey
1/4 cup water
3 tbsp red wine vinegar
coarse salt and fresh ground pepper
4 medium sized chicken breasts
 

Instructions
Preheat oven to 400 and set a wire rack over large rimmed cookie sheet and spray with Pam. Place pretzels in a large shallow bowl.
Add oil, mustard, honey, water, and vinegar to food processor and pulse until smooth. Add salt and pepper to taste. Place half of this mixture in another large bowl and add chicken breasts to coat evenly. Next, dredge chicken breasts in pretzel mixture and place on wire rack.
Bake for 25-30 minutes or until internal temp is 165-174 degrees. Let chicken rest for 5 minutes. Serve with remaining honey mustard sauce.
