     Ermine Frosting

Ingredients
1/2 cup light corn syrup
1/4 cup sugar
2 tblsp water
2 egg whites
Pinch of salt
1 tsp vanilla extract
 

Instructions
In a heavy sauce pan, bring the corn syrup, sugar and water to a boil, then remove from the heat. In a large bowl, whip the egg whites until stiff but not dry. Add the salt, and slowly pour the hot syrup over the egg whites beating constantly. Continue beating until the frosting is light and fluffy and hangs in peaks. Fold in the vanilla.
Serving Suggestions
Use on red velvet cake
