     Marinated Vegetable Salad

Ingredients
1 cup cherry tomatoes (WIC food)
1 cup small chunks cauliflower (WIC food)
1 cup small chunks broccoli (WIC food)
1/2 cup green onions, sliced (WIC food)
1 cup celery, sliced (WIC food)
1 cup zucchini, sliced (WIC food)
1/2 cup thin carrot slices (WIC food)
1 small can black olives
Italian dressing-regular or light
 
Optional-
1/2 can water chestnuts, sliced
1/4 cup sweet red pepper, diced (WIC food)

Instructions
Drain cans, mix all ingredients. Marinate with Italian dressing. Improves with age up to a few days in the fridge. Can serve plain or on lettuce and spinach.
