     Fried Chicken

Ingredients
2 1/2 to 3 lb chicken, cut up and salted
1 egg, beaten
2 C. milk
1/2 C. flour
 

Instructions
Mix last 3 ingredients to prepare batter for dipping chicken. Dip in pieces and drain slightly, then roll in flour-bread crumb mixture, 2 C. flour and 1 C. crumbs. Put pieces in hot oil or shortening. After browning, reduce heat, cover and cook till tender.
