     Texas Dirty Rice

Ingredients
1 pound bulk pork sausage (I use hot)
1 lb ground round- lean
(TRUE cajuns use chopped chicken livers instead, but I don't do this)
1/2 cup chopped green bell pepper
1 cup chopped onion
1 cup chopped celery
1/4 cup chopped fresh parsley leaves
4 cups hot cooked rice
3 Garlic cloves minced
 
Salt and freshly ground black pepper

Instructions
Cook the sausage and hamburger in a large skillet until browned. Add the vegetables and saute until soft. Gently fold in the rice and parsley. Season, to taste, with salt and pepper.
Serving Suggestions
I don't like liver, but if you do- the TRUE way to make Dirty rice is to use livers in lieu of hamburger.
