1. preheat oven to 120 degrees. Line an oven tray with baking paper. Use an electric mixer to beat eggwhites in a clean, dry bowl until soft peaks form. Add the sugar, 1 tablespoon at a time, beating well between each addition. Continue beating until sugar dissolves and mixture is thick and glossy. Add cornflour and half the orange blossom water and use a metal spoon to fold until just combined.
Spoon 4 portions of mixture onto the tray. Use a knife to smooth the surface.
Bake for 1 hour or until dry on the surface. Turn the oven off and set aside, with the door ajar, for 1 hour or until cooled to room temperture.
