     Lemon Chess Pie

Ingredients
4 eggs
1-1/2 c. sugar
1 T. flour
1 T. cornmeal
1/3 c. butter
1/2 c. buttermilk
1/3 c. lemon juice
1 t. finely chopped lemon zest
1 t. vanilla
 

Instructions
Have all ingredients at room temperature. Have butter liquid, but not hot. Beat eggs, sugar, flour, cornmeal, butter, buttermilk, lemon juice and zest and vanilla. Prepare crust by brushing with egg white and baking for 10 minutes at 325. Pour lemon mixture into crust and bake at 350 for 30-40 minutes until center only shakes a little bit.
