     Caramel Pie

Ingredients
Baked 9-inch pie shell
3/4 c. sugar, caramelized
1 c. sugar
3 T. flour
1/2 stick butter
1 tall can evaporated milk or 1-1/2 c.
3 eggs, seperated
1 t. vanilla
dash salt
 

Instructions
Caramelize the 3/4 c. sugar in a heavy skillet over low heat.While the sugar is melting, mix together the 1 c. sugar, flour, milk, and egg yolks. Cook over medium heat. When sugar has melted and mixture is boiling, slowly pour in the melted sugar, stirring constantly. The melted sugar will dissolve as it cooks. When sugar has melted and the mixture thick, remove from heat. Add butter, a dash of salt and vanilla. Pour into baked pie shell. Beat egg whites until stiff but not dry. Slowly add 1/3 c. sugar and beat until stiff. Spread over mixture and brown in a 350 oven.
