1/4 c red pepper, finely diced (lightly sauteed to soften)
1/4 c orange pepper, finely diced (lightly sauteed to soften)
1/4 c. onion, finely diced (lightly sauteed to soften)
1/2 tsp salt
1/4 tsp pepper
1/4 c grated Parmesan cheese
1/4 c fresh parsley, chopped
Instructions
Preheat oven to 350 degrees. Whisk together eggs and sour cream until
smooth. Add salt, pepper, parsley, and Parmesan cheese. Mix well.
Distribute the diced peppers and onions evenly in a well-greased
mini muffin tin. Spoon the egg mixture over the
peppers and onions (about 1 tablespoon in each cup). Bake for
15-18 minutes. Remove from muffin tin ASAP when they come out of the
oven to avoid sticking.
You can substitute any veggies/meats/cheeses you
like (I usually go with whatever I have in my fridge
that needs to be used up!)
