     Shrimp Scampi w/Roasted Peppers and Spinach

Ingredients
3 cloves garlic, thinly sliced
1 oz Parmigiano Reggiano cheese, grated
8 oz Mueller's Linguine Pasta
2 tbsp. olive oil
1/2 Cup sweet pepper Bruschetta Topping
12 oz, Large peeled & deveined white shrimp
1/4 tsp crushed red pepper flakes
1/2 tsp kosher salt, divided
1/2 tsp pepper, divided
 
1/2 Cup Progresso reduced sodium chicken broth
3 tbsp unsalted butter
4 Cups fresh baby spinach (6 oz)

Instructions
Cook and drain pasta. Preheat lg. saute pan on medium. Place oil and garlic in pan and cook 3-4 min. Add bruschetta topping, shrimp, pepper flakes, 1/4 salt and pepper. Cook and stir 1 min. Add broth; cook 2-3 min until reduced to half and shrimp turned pink. Reduce heat to low; stir in butter, spinach, cheese, pasta and remaining salt and pepper. Toss til butter and cheese melts and spinach wilts. Serve.
