     Crisp Prosciutto with Mango and Avocado Salsa

Ingredients
1 medium Mango, chopped finely
1 large ripe Avocado, chopped finely
1 small red Onion, chopped finely
1 small red Capsicum, chopped finely
1 small red Thai Chilli
2 tbsp Lime Juice
8 slices Prusciutto (120g), halfed lengthways
 

Instructions
Place Mango, Avocado, Onion, Capsicum, Chilli and juice in medium bowl, toss salsa to combine.
Cook prusciutto in large lightly oiled frying pan until crisp. Serve prusciutto with salsa.
Serving Suggestions
serve with warm tortillas. 213kcal (12.2g carbs, 14.7g fat, 8.2g protein)
