     Chef Ann's Pasta Dough

1 lb flour
4 eggs, plus 1 yolk
1/4 c EVOO
kosher salt
1-2 T water if needed

Blend all ingredients. Knead for about 8-10 min until the dough is smooth and supple. Cover and let it rest for 1 hour. When making ravioli, I like to run the pasta to the (3) setting on my machine.
