     Hearts of Palm Salad

Ingredients
14 oz can hearts of palm (not salad cuts), drained
1/4 medium red onion, thinly sliced
1/4 cup coursley chopped cilantro
1 TBSP fresh lime juice
1 TBSP olive oil
1/4 tsp salt
3/4 tsp fresh ly ground black pepper
 

Instructions
Thinly slice hearts of palm on diagonal and put in colander with sliced onion. Rinse well and pat dry.
Put in bowl and toss with remaining ingredients.
Serving Suggestions
Amy served with Tomato Pie, barley salad, green salad, grilled shrimp and mile high ice cream cake.
