1. Place the above ingredients in a large bowl & pour over 1
cup boiling water.
2. Let stand for 5 mns or more
|

3. Add 1 beaten egg & 1 cup Self Raising Flour and mix well.
4. Place mixture in a large loaf tin or 2 bar tins and cook in a
moderate oven (180 degrees) for 50 - 55 mns. Less time if in
the bar tins, just keep checking by poking a wooden skewer
into the middle. If it comes out clean then they are cooked.

Rum, Tia Maria, Baileys or any other liqueur may be added for
extra taste.
When cut it should look moist but not sloppy.
