     Banana Bread

Ingredients
2 1/2 cups flour
1 cup sugar
3 1/2 tsp baking powder
1 cup ripe bananas,mashed(about 3 bananas)
3/4 cup peanut butter (crunchy or creamy)
3/4 cup milk
1/4 cup vegetable oil
1 egg,slightly beaten
 

Instructions
Heat oven to 350 degrees F. Coat a 9x5 inch loaf pan with no-stick cooking spray. Stir together flour,sugar and baking powder in a large bowl. Add bananas,peanut butter,milk,oil and egg. Mix just until blended(do not over mix). Bake one hour or until toothpick inserted in center comes out clean.(Cover top loosely with aluminum foil after 45 minutes in oven to prevent over browning). Cool 10 minutes in pan. Remove to cool completely on a cooling rack.
