Hard boil 6 eggs and remove the shells.
Pre heat the oven to 200 oC

Dice the pork steaks and put in a food processor with the mixed herbs and Diced onion.
Remove the medallions (main oval of meat) from the bacon and put to one side. Remove all of the fat from the rest of the bacon. Add the off cuts to the Pork and onion mix in the blender, and Blend until a Sausage meat texture.

Place each of the bacon medallions on a sheets of cling film ( The film will help you wrap the mix round the egg.)
Devide the pork mix between the madallions.

Dry the eggs with a peice of kitchen towel and place on the pork mix.
Use the cling film to wrap the mix around the egg untill a scotch egg shape. Then remove the cling film.
Place the scotch eggs on a baking tray and bake in the oven for 25 mins untill the pork is cooked. Leave to cool ...... Enjoy.
