     Pumpkin Soup

Ingredients
1 Crown Pumpkin (large)
2 Carrots
2 Onions
1 beef oxo
2 garlic cloves
Water
2 tsps paprika
2 tsps chilli powder
Salt & Pepper to taste
 

Instructions
Deskin pumpkin and chop into small cubes, set aside Chop oinion, add to a pan with oil and the 2 garlic cloves (either whole or crushed), cook on medium heat until onion is brown, then add the pumpkin, put a lid on the pan and stir every couple of minutes.
When the pumpkin has softened or turned a dark orange cover pumkin with water (the more water the more runnier, vice versa), also add the paprika, chilli and chopped carrot
Leave for about 20 - 30 minutes or until pumpkin is mushy and soft
Use a food processor to turn the remaining into a soup
