     Veal Parmigiana

Ingredients
1 pound very thin veal steak
1 onion, minced
2 garlic cloves, minced
6 tbls oilve oil
2 1/3 cups (one lb, 3 oz can) tomatoes
1 1/4 tsp salt
1/4 tsp pepper
1 can (8 oz.) tomato sauce
Dash of oregano
 
1/4 cup fine dry bread crumbs
1/4 cup grated parmesan cheese,
1 egg, beaten
1/2 lb Mozzarella cheese, sliced

Instructions
Cut veal into serving pieces. Cook onion and garlic in 3 tbs olive oil for 5 minutes. Add tomatoes broken with fork; ass salt and pepper. Simmer, uncovered for 10 minutes. Add tomato sauce and oregano. Simmer for 20 minutes longer. Combine crumbs and 1/4 cup grated cheese. Dip veal into egg, then into crumbs; brown in 3 tbs oil in skillet. Transfer veal to a shallow baking dish. Pour about two thirds of sauce over veal, top with mozzarella, then with remaining tomato mixture. Sprinkle with the rest of grated cheese. Bake in preheated oven (375) for 30 minutes.
