     Bariatric Black bean soup

Ingredients
1 can black beans (15.5 oz)
1 medium yellow onion, chopped
2 celery sticks, chopped
3 strips cooked bacon
1 can stewed tomatoes (14 oz )
1/2 cup yellow corn
1 garlic cloves, chopped
1 cup chicken broth
1/4 tsp chili powder
 

Instructions
In medium sized soup pot, cook the onions, garlic, and celery in some olive oil, about 5 minutes or until the onions are soft.
Add the black beans (juice and all), tomatoes, yellow corn, chicken broth, bacon and chili powder. Simmer on low heat for about 20 minutes.
In a food processor blend the mixture together and return to the soup pot. Add salt and pepper to taste and serve with a small spoonful of sour cream.
