     Seven Grain Bread

Ingredients
2-3 c. seven grain cereal flakes
4 c. unbleached all purpose flour
4 Tbsp. sugar
2 Tbsp. salt
1 heaping Tbsp. yeast (or 2 pkts of yeast)
5 cups warm water
 

Instructions
Mix thoroughly and then start adding additional flour and kneading it until you have a smooth elastic dough. I am guessing it takes 12 c. of flour type stuff (including the grain stuff) all together, but it really varies and honestly you just need to get a feel for it.
Coat bowl with oil and put the dough in it turning it over so both sides are coated with oil. Let rinse until double (1-1/2 hours). Punch the dough down and divide into 3 pieces. Roll each piece into a rectangle and then roll the rectangle up jelly roll style. Pinch the ends together. Place each piece in a greased (I use Pam) bread pan. Let rise until double (about 45 minutes). Bake at 350 for 40 minutes.
Wonderful just out of the oven! Makes great toast! Freezes well.
