     Veggie Chopped Liver for Passover

Ingredients
5 large onions, sliced
1/4 cup vegetable oil
1 lb fresh mushrooms, sliced
1/2 cup walnuts
8 to 10 Kosher for Passover Tam Tam crackers; onion/garlic flavor
4 egg whites from hard boiled eggs
salt and pepper to taste
 

Instructions
In a deep frying pan, heat the oil to medium. Add the sliced onions and cover for 5 minutes. Stir and saute slowly until the onions are golden brown and caramelized. This will take at least 20-30 minutes.
In the same pan, saute the mushrooms and walnuts until the mushrooms are browned and crisp.
Crumble Tam Tam crackers into food processor. Add mushroom/onion/walnut mixture. Process until you have a smooth consistency. Add the boiled eggs whites; do not over process. Salt and pepper to taste.
Refrigerate for several hours. Garnish with chopped parsley.
Serving Suggestions
Serve with pesach crackers, matzah, or cut up vegetables.
