     Golden Chicken and Autumn Vegetables

Ingredients
4 Chicken breast halves, skin removed
1/4 tsp. dried thyme leaves, crushed
1 C. Chicken broth
1/4 tsp. garlic powder
1 Tbsp. chopped, fresh parsley
1 lg. sweet potato, peeled and cut up
1/2 tsp dried rosemary leaves
1 C. fresh or frozen green beans
 

Instructions
Brown chicken in a small amount of oil in a nonstick skillet. Add broth, herbs, sweet potato and beans. Heat to a boil. Cover and cook over low heat 20 minutes or until done. Serves 4.
Serving Suggestions
This is a great, quick, complete one- skillet meal. I think that sweet potatoes are one of America's greatest undiscovered vegetables.
