     Chicken Jambalaya

Ingredients
1 large chicken, about 4 lbs., cut into pieces
2 C. rice, white basmati or long-grain
4 Tbsp. oil
1/2 C. chopped green onion tops
4 large onions, chopped
1 1/4 tsp. salt
3 cloves garlic, chopped fine
1/2 tsp. black pepper
3 C. Hot water
 
Red Pepper (pinch or more, be brave here!)

Instructions
Preheat pan; brown chicken in its own fat, adding oil to barely cover the bottom of pan. Add onions and garlic, cover pan and cook over low heat until onions are soft. Add rice, increase heat, stir constantly and cook until rice begins to toast.
I came across this recipe when Jimmy Carter was still president and, for some reason, it still makes me think of him. It's a great one-skillet, healthy, Southern meal, economical and spicy. Think of former President Carter when you make this and pray for leaders who will bring us peace.
