     Lamb Chops (Lollipops)

2 large garlic cloves, chopped or minced
1tb fresh rosemary leaves
1ts fresh thyme leaves
Pinch of cayenne pepper
About 1/8ts kosher salt for every two chop
2tb EVOO
Pinch of ground black pepper
6 to 7 lamb chops, about 3/4in thick
Note- Can substitute fresh herbs for dried.

Combine all ingredients in a bowl except for chops. Can mix ingredients with a spoon or pulse with a hand mixer until combined. Rub mixture on both sides of chops and let marinate for at least an hour to overnight in the refrigerator.
Remove chops from refrigerator and allow chops to come to room temperature (about 20 minutes).
Heat stainless steel fry pan on high heat until almost smoking. Add chops and sear for about 2 minutes. Flip the chops over and sear for another 2.5 minutes for medium rare.
