     Tofu in Peanut Sauce

3/4 cup peanut butter
1 bottle soy sauce
1 block extra firm tofu
1 cup broccoli
1 cup snap pea pod
1 small onion, chopped
Olive oil
1 bottle taryaki sauce
2 cups rice

Place the rice into a rice cooker and let it cook while you are preparing the other ingredients. Cut the tofu into small chunks (however large or small you prefer)and place into a large skillet with olive oil. Then add the vegetables. Saute until vegetables are soft. Season as desired.
While the tofu and vegetables are being sauteed, place the 3/4 cup of peanut butter. Add taryaki and soy sauce to taste. I used approximately 2 tbsp of each. Heat at medium low heat until melted.
Once the sauce is melted and to your liking, pour over the tofu and vegetables. Serve over the rice once it is cooked and serve.
