Mix goat cheese with Italian seasoning (best to do
the night before to let the spices mix but not
necessary). Mix lemon juice, garlic and EVOO in a
shallow dish and marinate salmon filets at least 30
minutes before baking. (if more than 4 fillets, then
double the ingredients of the marinate)
Bake salmon 12 minutes at 425 degrees. (no need
to turn). Serve salmon topped with 1 tbsp of goat
cheese mixture sprinkled on top of salmon.
