Roll cookies with rolling pin until very fine. Place 1/3 of crumbs into carrot cake mix. Set remaining crumbs aside. Mix carrot cake mix, softened butter, 1/3 of the crumbled cookies and 1 egg together. Pat into bottom of 9x13 greased and floured pan. Shred 1/2 of carrot and spread over mixture. Set aside. Mix cream cheese, 2 eggs, and powdered sugar, beat with mixer until smooth. Spread evenly over top of cake mixture. Add 2/3 remaining cookie crumbs over top. Bake at 350 degrees 45-55 min (until raised in center). Cool and cut into squares. Squirt a small dollop of caramel syrup onto each square.
