     Tomato-Basil Soup

Ingredients
4 cups chopped, seeded, peeled tomato
4 cups tomato juice
1/3 cup basil leaves
1 cup milk
1/4 tsp salt
1/4 tsp cracked black pepper
4 oz cream cheese
 

Instructions
Bring tomato and juice to a boil in large saucepan. Reduce heat; simmer, uncovered for 30 minutes.
Place tomato mixture and basil in blander and process until smooth. Return to pan.
Stir in milk, salt and pepper. Add cream cheese, stirring with whisk.
Cook over medium heat until thick.
Serving Suggestions
Serve with French bread baguette
