Saute onion and garlic for 3 minutes over medium
high heat. Add broth and potato. Bring to boil.
Reduce heat and simmer for 5 minutes, until potato
is tender.
Whisk together milk and flour. Add to potato mixture
and let thicken for 5 minutes. Remove from heat and
add cheese.
Stir in rice, chicken, pepper and salt. Garnish with
parsley.
