     Microwave Peanut Brittle

Ingredients
1 c. sugar
1 c. raw peanuts
½ c. white syrup (not light)
1 T. butter
1 tsp. vanilla
1 tsp. baking soda
 

Instructions
Mix the first 3 ingredients in a pan suitable for microwave ovens. Cook for 4 ½ minutes. Stir with a wooden spoon. Cook for 3 ½ minutes, and then stir. Add the butter and vanilla. Cook for 2 minutes and add the baking soda, mixing well. Carefully pour the foaming mixture on a greased cookie sheet. Let this cool and then break into small pieces. Store in a container with a tight fitting lid. To successfully make this peanut brittle you much know your microwave. The cooking times suggested in this recipe may need to be changed to suit your microwave. For the first cooking time check the mixture at about 3 ½ minutes then adjust your time from there. Be careful when making any recipe that contains lots of sugar. It heats very quickly and can cause a severe burn if spilled.
