     Mediteranean Fish

Ingredients
1 lb ripe tomatoes or 16 oz canned
1 T olive oil
1 med onion chopped fine
2 cloves garlic minced
juice and zest of 1/2 a lemon
1 pint veg broth I used chicken
1 T tomato paste
1 bay leaf
salt and pepper
 
1 bunch fresh parsely
1 T capers
10 black olives pitted and cut in half
Haddock or cod or sole
salt and pepper
olive oil

Instructions
Fry onion in oil over med heat until softened then turn down heat and add garlic. cook 3 or 4 min. Add tomato and break up if needed. add all other ingredients EXCEPT parsely capers and olives. Simmer 20 min.Remove bay and add parsely. Blend the sauce with a stick blender leaving some chunks for texture. Add olives and capers.
Wash the fillets and dry with paper towels. I brush with a little olive oil then salt and pepper the fish and place on tinfoil that has been coated with olive oil. Broil 5 or 10 min. depending on the thickness. Brown rice is nice served with this sauce.Green beans also good with this sauce.
