     Spinach and Rice Pilaf

Ingredients
1/4 C. Olive oil
Juice of 1 lemon
2 large onions, finely chopped
1 C. fresh dill, or 2 tsp. dried
2 garlic cloves, chopped
1 lb. Fresh spinach
2 C. basmati rice
1/4 lb. feta cheese
 

Instructions
In stewing pot heat olive oil. Add onions and garlic and cook over medium heat until onions are softened. Add rice and stir for 1-2 minutes. Add spinach in batches. Season with salt and pepper. Add 3-4 C. water. Cover and simmer for 20-30 minutes until rice is tender. Add lemon juice and serve topped with feta cheese. One package frozen spinach may be substituted for fresh spinach.
How do you get children to eat spinach? I always find it surprising, but spinach is one of the favorite vegetables of ALL my children. Growing up, my only introduction to spinach was the cans PopEye burst open. As much as I now love fresh spinach (especially in a salad), I haven't had much luck growing it (it always tends to bolt). Frozen spinach is a very acceptable substitute and the one frozen vegetable that I always try to keep in my freezer.
