     Carrot salad w/walnuts & honey-lemon dressing

Ingredients
2 Tbsp. canola oil or walnut oil
2 Tbsp. lemon juice
1 Tbsp. honey
1 small shallot, minced
1 cup peeled & shredded celery root
1/4 cup chopped walnuts, toasted
2 cups shredded carrots (4 medium size)
1/2 tsp salt
1/4 tsp pepper
 
1/4 cup golden raisins

Instructions
To peel celery root (celeriac) you need to remove thick skin with knife and peel at least 3 times to remove it
To toast walnuts- 375 F on parchment paper for 5-10 minutes
Whisk oil, juice, honey, shallot, salt & pepper in a large bowl. Add carrots, celery root, raisins and walnuts. Toss to combine.
