     Southwestern Corn & Tomato Soup

Ingredients
2 oz. smoked slab bacon. cut small
1 small onion, cut into 1/4 in. dice
1 tsp. hot red pepper flakes
4 medium cloves garlic, smashed and peeled
1/3 cup diced green bell pepper
1/3 cup diced red bell pepper
1 lb. firm potatoes, peeled and cut into 1/2 in. dice
3 cups canned italian plum tomatoes purees with their juice
kernels of 6 ears corn
 
1 tbsp. kosher salt
freshly ground black pepper, to taste
2 tbsp. coarsely chopped cilantro
2 medium scallions, white part only, thinly sliced across
hot red pepper sauce

Instructions
in a medium saucepan, cook the bacon ocer medium heat until it is crisp. stir in the onion, red pepepr flakes, garlic, peppers, potatoes, tomatoes puree, and 1 1.2 cups water. bring to a boil. lower the heat and simmer for 10 min. stir in the corn and simmer for 10 min., or until the potatoes are tender. season with salt and pepper. if the soup has been refrigerated, reheat it and stir in the cilantro, scallions, and hot red pepper sauce
