     Spanish Rice

Ingredients
2 medium onions, chopped
2 tsp. chili powder
2 cloves garlic, minced
dash of cayenne powder
2 C. white rice
2 tsp. sugar
1 qt. Tomatoes and their liquid
1/2 tsp. salt
1/2 C. chopped green pepper
 
2-3 Tbsp. Olive oil

Instructions
Heat olive oil in large skillet. Add onions and sautÈ until tender. Stir in garlic and rice. Continue stirring until rice begins to toast. Add remaining ingredients except green pepper. Also add approximately 3 C. water. Cover and bring to a boil. Reduce heat to a simmer and cook until rice is tender. Add more water during cooking if needed. Add green pepper and cook until pepper is tender crisp.
