     Vegan Butternut Squash Curry

Ingredients
1 tablespoon canola oil
1/2 onion, diced
1 inch knob of ginger, minced
1 clove minced garlic
3 teaspoons curry powder
1 teaspoon chili powder
1 butternut squash, peeled & diced
1 14 oz can coconut milk
1 cup water
 
Salt
Pepper
1 teaspoon vegan bouillon

Instructions
Fry onion, garlic & ginger in oil until onion is translucent. Add curry powder & chili powder and cook 2-3 minutes. Add butternut squash, coconut milk, water and bouillon. Bring to boil and gently simmer for 45 minutes. Add salt & pepper to taste.
Serving Suggestions
Serve over rice and with a cold beer!
