Ingredients
1 tablespoon canola oil
1 clove garlic, diced
1/2 large red pepper, diced
1 onion, diced
3 carrots, diced
1 tablespoon cumin
3 tablespoon chili
Pinch cayenne pepper
1 can mixed beans, drained
 
1 can diced tomatoes, with juice
1 small can sliced mushrooms, with liquid
1 small can sweet corn, with liquid
2 teaspoons oregano
1 tablespoon unsweetened cocoa powder
2 tablespoons chia seeds
1 tablespoon lime juice
Salt & pepper to taste
2 cups vegetable broth

Instructions
In a large pot, add the oil and heat. Add garlic, peppers, onion, carrot and sauté until everything is soft, approximately 5 minutes. Add the rest of the ingredients, cover, and cook for about 30-40 minutes on low to medium heat.
Serving Suggestions
Serve over rice
